From Our Summer Menu: Simon Recommends…
To celebrate Indigo Seafood & Grill being awarded an AA rosette for culinary excellence for a tenth time, we asked Simon Margaroli to share his favourite dishes from our 2019 summer menu.
Seared king scallops served with crispy bacon is always a favourite starter in the restaurant. We’ve paired this classic combination with the summer flavours of pea, broad bean and sorrel.
Head Chef Luca and I love to rethink a popular dish and create a new take. We’ve achieved this with our seared fresh tuna Salad Nicoise, by replacing new potatoes with roasted sweet potato (rich in vitamins and minerals including iron, calcium, selenium, and they’re a good source of most of our B vitamins and vitamin C) and using quail eggs, considered a delicacy in many parts of the world.
For dessert, it has to be something indulgent. A difficult choice when our menu includes the Indigo chocolate plate. But on balance I’d opt for the warm treacle tart served with a clotted cream.
